Ethiopian Food

We had another birthday feast, I wanted to chronicle the recipes, lest I forget them.

Doro Wat:
9 lbs chicken
5 lbs onion, chopped fine
2 T fresh ginger, minced
4 T fresh garlic, minced
3 cans diced tomatoes
1/2 cup Berbere spice combination

I cooked the garlic and ginger in some coconut oil.  Then added the onion.  Sauted it all for about 5-10 minutes.  Added the Berbere, cooked another 2-5 min.  Added tomatoes.  and let simmer about 10 min.

I layered the chicken in a large roaster.  Covered chicken with all that onion mixture.  Put in fridge overnight.   The chicken was actually still frozen a bit.

Next day I baked the entire thing at 325 for 2 hrs.

Although the onion mixture was quite spicy the day I fixed it, after marinating and cooking with the chicken, the spiciness seemed to have settled down.

I don't make Injeera bread, so I cooked up some brown basmati rice to go with the chicken.

For a side dish, I cooked up this vegetable dish, but I used coconut oil instead of olive oil:

Jamie fixed this salad, but I think she used red bell pepper instead of spicy green ones.

Served a Moscato wine that worked well.  Suggestions were also a Riesling or Mead.

Served banana cake with chocolate icing for the birthday boy!

God's Plan for Me

(written by an 8yo)  I found this paper lying on the counter, and I figured I'd better write it down somewhere a bit more permanent.  I think it's a profound comment from such a young person.  I have typed it exactly as written...

God's Plan for Me (and a kid with cancer)

When I figured out that we where moving to Alabama, i was crushed.  I would be crying in bed sobbing to myself that I couldn't survive without the polase [Palouse].  But now that I think about it I relise that if God wants me in Alabama he'll put me there.  If he wants me to come Back to Moscow when I'm nineteen then he'll do it.

Recently a young boy in our Church was put on treatments for cancer.  I can't imagine the pain his family is going though [through].  But it may help if they think that if God wants Jonah to go to heaven then he'll do it, and if God wants Jonah to live and get rid of cancer than he'll do it.

and now I'm exited about moving

Parenting

"If obedience is not rendered in the homes, we shall never have a whole city, country, principality, or kingdom well governed. For this order in the homes is the first rule: it is the source of all other rule and government." Martin Luther

And my two cents:

If the father does not re-enforce the mother's command, then there will not be success.  There should never be any doubt that the father will back up what the mother has asked.  Otherwise, the mother's commands have no weight and will be mocked or disregarded.  And since the mother is usually the one home with the children most of every day, this is an important tip.

This also plays out when an older child must take care of youngers....the younger child must be disciplined for not obeying the older's command (if the older has been put in charge)
